Learning outcomesOn completion of this unit, students will have gained practical experience in a variety of settings and will be able to:
1. Demonstrate the skills and knowledge required to critically evaluate the provision and management of food services in a health care setting;
2. Demonstrate a sound knowledge and application of the principles and practice of food service delivery and management in a health care setting, including menu planning, recipe standardisation, quality and portion control, human resources and financial management;
3. Use food legislation, regulations and standards to develop, implement and evaluate food systems to main food safety; and
4. Demonstrate professionalism, evidence-based practice and effective communication skills in food service settings.

Submission of assessment items
Special assessment requirements
Students must satisfactorily complete all assigned placement assessment items to pass the unit. Attendance at 100% of the professional placements is required, and is a condition for passing this unit, see section 6c for more details.
Note: Your e- portfolio showcase (see (5a) Assessment Requirements) will be assessed by a panel within the assessment unit 10137 Assessment of Dietetic Competence PG. Until this time you will receive a withheld grade for this unit with the grade allocated prior to undertaking unit 9301 Nutrition and Dietetics Professional Internship PG. This process provides moderation for the work completed within this unit.
This is a 3 credit point work integrated learning unit. Students are therefore required to complete the equivalent of 150 hours over the semester. Students are required to complete a minimum of 4 weeks in a clinical practice setting. Additional work will include preparation for placement, and completion of your e-portfolio.
Students are required to attend 100% of all professional placements unless they have a valid reason for non-attendance (e.g. illness) or permission by the Unit Convener.
Required IT skills
Students are expected to be familiar with the use of diet analysis software (i.e. Foodworks, Foodscan & Serve). Student will be required to use Mahara. Additional face-to-face support is also available through the UC Library Rovers.
Students must travel to placement sites and be accommodated at their own expense. Uniform and textbooks costs must be paid for by students. Some sites, such as The Canberra Hospital, require students to pay $20 cash as a deposit to obtain a (compulsory) ID card. This money is fully refunded on return of the ID on the last day of placement.
Work placement, internships or practicums
This unit involves visit to health settings and therefore, additional student responsibilities are required in addition to those described in section 6. Work-place learning requires strict adherence to professional practice principles and ethics. Client /patient confidentiality must always be maintained including for assessment items such as reports or essays.
