This unit introduces students to the fundamentals of nutrition. It will familiarise students with principles of healthy eating. Students will be introduced to basic functions, requirements and food sources of key nutrients. Influences on food availability and food consumption will be covered. The role of key organisations involved in food supply, food regulation, nutrition policy and nutrition education will be introduced.

Learning outcomes

On completion of this unit, students will be able to:
1. Identify key functions, food sources and requirements of specified nutrients;

2. Identify and effectively make use of key nutrition resources; and
3. Demonstrate a knowledge of factors that affect food availability and consumption.

There are no essential text books for Introductory Nutrition. The following texts are recommended if you would like to supplement your learning:

  • Wahlqvist, M (ed), Food & Nutrition, Food & Health Systems in Australia & New Zealand, 3rd Edition, Allen & Unwin, Sydney, 2011. (Library Call No. TX353.F66 2011)
    • Only a couple of chapters are relevent - recommend borrowing from the library
  • Whitney et al. (eds), Understanding Nutrition, Australian & New Zealand Edition, 3rd Edition, Cengage Learning Australia, Melbourne, 2017. (Library Call No. QP141.W46 2017b)

These books are available on short-term loan from the library. There is no need to purchase these books.

Moderation of Assessment

This unit will be moderated as per Faculty of Health Moderation Guidelines. A copy is available via Canvas.

Repeat students

Repeat students are required to comply with the unit requirements to pass the unit. Marks from a previous attempt at Introductory Nutrition cannot be carried over to a subsequent attempt.

Special assessment requirements

Unit requirements:

To pass the unit, students must:

  • complete the 24hr recall assignment and presentation
  • attain at least 50% overall (total grade)

Use of Text-Matching Software

The University of Canberra uses text-matching software to help students and staff reduce plagiarism and improve understanding of academic integrity. The software matches submitted text in student assignments against material from various sources: the internet, published books and journals, and previously submitted student texts.

Participation requirements

Participation in all lectures and tutorials is strongly encouraged. Lectures will be recorded and available via Canvas. Tutorials will not be recorded.

Students are expected to check the Canvas site regularly for updates and announcements. Students should also regularly check their student email.
